Anyreason I couldn't make Skeeter Pee or Apfelwein
in a 5 gallon bucket with an airlock as opposed to a carboy??

I have a few extra 5 gallon buckets with airlock covers but I'm short on Carboys at the moment and am itching to try these two.

Nope, no reason. If you are filling the bucket to the edge, make sure to use a blowoff tube, because although wine doesn't *typically* have beer-style kreusen, it can happen sometimes. If you have a few inches of space from the top, it should probably be okay.

I prefer the bucket for going through active fermentation. Their easier to clean fruit out of, let more fumes escape, and easier to stir and break up yeast colonies in. You don't really need an airlock until after fermentation slows back down because there is enough co2 created to keep it from oxidizing.
