adding more malt extract in middle of the boil

I have seen many recipes that call for not adding all of the dme at the beginning of the boil and was wondering what the purpose of it was?
 
Knockout fool dme or lme will darken during the boil so adding dme at flame out will help keep the beer lighter so as to stay within that style of beer.
