Mashing out with Cooler

I have a converted igloo cooler (the rectangle kind) and have been having batches more watered down than I would like so I've been looking into mashing out. I can't heat my cooler with out some questionable side affects and wanted to know what would be the best way to mash out with what I have currently?
 
if you use beer smith it will tell you the amount and temperature of water to add to the mash to bring the temp up to 168 (or whatever your desired temp is)
Heating elements are kind of out of the question due to scorching.
 
Yeah, add boiling water to get the temperature up. In addition to Beersmith there are online calculators you can use, like this one.
