SMaSH with Nugget hops, unnoticeable flavor/aroma?

I brewed a 2 gal BIAB SMaSH (Belgian pale malt + Nugget) 3 weeks ago and bottled today.

This is my 3rd brew and as the other 2 the hops are barely noticeable.

I used .15 oz of Nugget at 60 mins
.25 oz of Nugget at 25 mins and
.45 oz of Nugget at 0 min

This time the boil seemed to be rolling normally, I used to think it was the problem for my first brews, but for this one I doubt it. Any idea as to why it happens?

I could also add that the beer tasted like banana a bit, my friend said it reminds him of a saison. I think it's the result of a poorly stable fermentation room temperature.

Side notes :
- Used 2,4 kg of Belgian pale malt
- Used the White Labs #WLP001 California ale as the yeast.
