I homebrew beer, but my wife doesn't really like beer. So, I got her a starter kit for homebrewing wine. Unfortunately we never got around to brewing the kit and the yeast expired in 9/10. It is a dry yeast by LALVIN EC-118. I know nothing about wine making.

Can we still get away with this yeast? I know beer yeasts can work past expiration they may just take longet to get started.

please help.

There should be instructions on the back of the pack of yeast.

You can get such a packet of the yeast at your LHBS for super cheap (I get mine for 80 or 90 cents a piece). So getting a fresh pack is no biggie, in fact I would just grab a fresh one that is in date unless you dont have a shop close.

Did it expire Oct 2009 or Sept 2010 ? Probably still good if Oct 09

HOW TO USE
Rehydrate EC-1118 in 5 times its weight of potable water at 40°C. Let stand for at least 20 minutes
then gently stir occasionally to break up any clumps. Add to the must.
- THE TOTAL REHYDRATION DURATION SHOULD NEVER EXCEED 45 MINUTES
- AVOID COLD SHOCKING THE YEAST. THE TEMPERATURE DROP BETWEEN THE
MUST TO BE INOCULATED AND THE REHYDRATION MEDIUM SHOULD NEVER BE
>10°C (if any doubt, please contact your supplier or Lallemand)
- IT IS ESSENTIAL TO REHYDRATE THE YEAST IN A CLEAN CONTAINER.
- INITIAL REHYDRATION IN MUST IS NOT ADVISABLE.
