Well, if you want to get REALLY geeky about brewing science, you have to hit the research literature. Pretty technical stuff, but it is years ahead of even the most recent books out there.

The Institute of Brewing and Distilling runs one of the top brewing journals that publishes original, peer-reviewed scientific research. Currently, it is providing free access to all electronic issues on their website:

The American Society of Brewing Chemists runs a better journal (IMO), but it is only free to members (membership is $125/yr -- not a lot).

I am popping my posting cherry. I just want to thank you Flyguy on giving me these great tools. I love reading journal articles, as nerdy as that may sound, and these are some PRJ's I am sure I will love. Thanks.
 
thanks, don't know that i can understand it all but i will look forward to trying.
 
The article in the latest issue on a new paradigm in brewing is interesting to think about. It discusses the cost savings of other methods of creating beer... with the most saving both environmentally and materially coming from a system of flavoring E100.

Not the route any of us are likely to go, but it was an interesting read. I bookmarked the site to hit every quarter and see what I can digest.
