I'm planning to cook some beef stew today, and don't have a bottle of red wine. Oh-- woe is me! NOT!!

I'm gonna use a bottle of homebrew instead. Saute carrots, onions and garlic in a little olive oil with a bit of tomato paste mixed in for a darker color. Season cubes of beef and dredge in flour and brown them off. Put everything in a pot with a couple of bay leaves, pour in the beer, cover it and slow cook it in the oven at about 300 F. Add some mushrooms right at the end. What do you think?
 
Sounds great! Beef in beer is a classic old recipe. A long slow cook is spot on. What beer you gonna use?
