Can someone blessed with photoshop skills help me out a bit?

I need to cut the head off this pic...

And paste it onto this pic:

And have it look reasonable....not like a third grader did it (my first try).

ANy help would be great. Its being used for my Christmas gifts, which will be bottled in belgian bottles complete with cork and cages.

Thanks for the replies guys. Actually, I need the guy, its my uncle and its for my newest batch of "Crazy Uncle". If possible, his head (hat and all) would rock. If the hat ain't possible, I will use Ians.
