Did my first 2 step infusion mash this past weekend!! 30 minute rest at 122F and an hour at 152F... it was perfect in my 5 gallon Rubbermaid beverage cooler! I made a spreadsheet to calculate strike temps and such. ALSO used the first 5 quarts of runoff, boiled, to raise temp for mashout! I have never had a krausen this high... I am so geeked! Cannot wait to get home and check it out this weekend!

It is my own little wheat beer.... here it is....

Water: 8.5 quarts to 134F, rest at 122F for 30 min./ 6.5 quarts to 205F, rest at 153F for 60 min
Grain: Brittish 2 Row Pale (4lbs)/Wheat Malt (5.5 lbs)/American Crystal 20L (.5 lbs)/Black Malt (1oz)
Mash out at 170F by using initial 4qts of runoff boiled, and initial sparge water @ 180F

Used 11G of Windsor Ale Yeast... ferment pretty violent at 9 hours....
