So I finally got everything in my control box wired up and I trying to calibrate the inkbird it wont go into self tuning mode no matter what I do I changed the CTRL setting to 0, 1, 2, and 3 still nothing also the temp is off by like 4 degrees C ??

could you give us your wiring diagram?
 
There is usually an offset value to correct the temp probes reading if you already selected the correct type of probe to match the type your using.
