I am looking for a somewhat quick recipe, something that I could bottle soon, for a hard cider. I was thinking the easiest way would be to buy some local apple cider, and throw it in the carboy. Would I need to do anything else? and I definitely want to use unpasteurized cider. Also, when would I bottle?

Put it in a carboy and add some yeast. Add sugar to your liking. Get your OG and check FG after a week or so and maybe it will be ready. But cider gets better with age.
 
1. do you mean " age " by fermentation in the primary or while in the bottle?

2. What kind of yeast is good for cider? I dont really want anything dry like wine.
