Thinking about making some cider with 2 or 3 small bottles of Montmorency Tart Cherry Juice Concentrate and Motts apple juice w/ s-04 yeast. Anyone out there have any luck with something similiar? I know plain apple juice and s-04 tastes great.....not sure how the cherry juice would work? :confused: Thanks
 
Montmorency is pretty tart, I used 3 quarts of montmorency juice with 30lbs of Bing cherries in a 6 gallon batch of wine. So far it seems to be progressing well, but it has a long way to go yet, it's only 4 months old now. I have 1 more quart just in case it needs it. One thing I can tell you is this: A wee bit of vanilla can take cherry flavours to new heights without it being obvious. Hope some of this info is useful to you. Regards, GF.
