Clary Wine
10 gallons water
35 lb loaf sugar
12 eggs
2 pecks of clary blossoms
1 pint good new yeast
Mix sugar, water and well-beaten egg whites. Let boil gently for ½ hour, skimming until the mixture is quite clear. Let stand until cold. Pour into a cask, add 2 pecks of clary blossoms stripped from the stalk and 1 pint of yeast. Stir the wine three times a day for five days. Stop it up, and let stand for twelve months. It may be bottled at the end of six months if perfectly clear.




Obviously a very old recipe. Someone brew this and let me know how it goes. :mug:
 
Ya, the whole eggs thing sounded gross to me. apparantly the clary sage will get you super drunk but may give you a headache after. Obviously a very old recipe.

I wonder just exactly which "Clary" they refer to?

Clary, common name of the flowering plant Salvia sclarea
Annual clary, common name of the flowering plant Salvia viridis
Balkan clary, common name of the flowering plant Salvia nemorosa
Meadow clary, common name of the flowering plant Salvia pratensis
Silvery clary, common name of the flowering plant Salvia argentea
Sticky clary, common name of the flowering plant Salvia glutinosa
Whorled clary, common name of the flowering plant Salvia verticillata
Wild clary, common name of the flowering plant Salvia verbenacea
Yellow clary, common name of the flowering plant Phlomis fruticosa

All but one listed here are in the genus salvia; there is another salvia (salvia divinorum) that has psychoactive (hallucinogenic) compounds in it. I wonder if any of the other salvias have the same, or similar properties? You never know with some of these ancient recipes. It's just one of those things you think about when there's nothing worth watching on TV. Regards, GF.
EDIT: BTW, salvia divinorum is ILLEGAL in the USA & likely in most of Europe as well. Regards, GF.
 
i dont believe salvia divinorum is illegal in all states just yet

besides that this sounds like an interesting recipe
 
Huh, so that's what my cousin smoked. And yeah it's still legal in some states at least.
 
Sounds almost like a Mrs beaton recipe to me

she has some old wine and alcoholic ginger beer recipes which she always talks about pecks and loaf sugar in her recipes as amounts

some of the recipes of her day seam quite intresting a few below

of brandy.
