How much white stuff should I end up skimming from 12 lbs of honey? I kept skimming and skimming for about 20-30 minutes. I have a big bowl full of stuff that I'm assuming is wax. It seemed like I could have skimmed off everything had I kept going.

Again - noob.

Pretty much keep skimming until you think it's clean enough. But really, you don't need to cook your honey before pitching your yeast- it's a matter of preference, from what I've read.

I'd have just put it all the honey in your brew pot and then add enough boiling water to make it 'liquid', stir well to dissolve it. Add a little (gentle) heat to help it if you seem to have under-estimated the water to dissolve it. Leave it covered for a while. As it cools the wax rises on water like oil. Skim it well then.
This advice is too late - I know!;):D
