I have read a ton of info. about all these different electric kettles that everyone have been making. I would love to do something like that. I am curious to one thing. Some people have different controllers running them (PID SRS?) Can an electric kettle be made as simple as plug it in when you want to boil and unplug when your'e done, Or do they run to hot and that's why you dial down there power with a controller. Some advice would be great Thank you

No, you can size things to get a proper boil at 100% power to the element. I ran my e-kettle standalone for a year before integrating it into my countertop brutus 20 rig. It uses a single 2KW 120V element and runs a good vigorous boil on up to 5 gallons of wort.
