I wanted my pitch black american oatmeal stout ready for my daughter's first birthday. You know because that's why I simply had to kill myself making a 7.2% ABV batch.
Anyways, her bday is in December, and I kegged it today and am priming it. I'll let it prime for 2 weeks, I find it needs an extra little bit of time in the kegger, then cold condition (lager) it until it's debut.
My beers are NEVER done when I want them.
The only issue now is to keep from drinking it before.
Sidenote: For those of us who like to mess with our beer, a good idea is naturally priming in a keg. That pretty much means once that thing is sealed up, it's staying sealed.
