I just "processed" 6.5 lbs of nectarines to add to a low abv blonde (4.2%) that's already fermented. I added a crushed camden tablet, but for some reason didn't bother to think how long it needs to sit with the fruit. I'd let it sit for 12 or so hours, but I'm headed out of town for a couple days starting tonight(would give me 5-6 hours with the fruit and camden tab). Am I better off letting it sit for 36 hours or will the camden do it's thing by the time I'm ready to leave tonight?

Do I need to leave it at room temp or refrigerate it? Thanks!:mug:

I've had no problem after leaving the camden tabs in the fruit overnight. I've heard that as little as 1 hour is OK too... but never tried this...

Hey Laurel
Sorry it took me so long to find your post....I hope someone in chat was able to help.
If you just keep your fruit covered....ie. under an airlock...it's fine for 36 hours...24 is normal.

I'd say 6 isn't enough...but you know I wouldn't use the campden anyway.
