I'm thinking about making my first lager. No refrigeration, but the winter temps keep my garage around 50 degrees. Will that work? We probably have at least another month or so of cold temps.

Question:

If the temperature is not totally consistants day to day, will that hurt my fermentation......even if fluxuations remain relativley cool.

-50°F is great.

-Temperature stabilization is important, primarily in the first 1/2 to 2/3 of fermentation. A cold water bath would help with this.

-You'll need to lager in a secondary container at near freezing temps after primary fermentation is complete for 3 to 6 weeks (on average). You could go as high as 40 and probably still be OK, but 33°F is a much better temp.
 
I have my lager in a large plastic tub of watter out in a tool shed on a large concrete slab. I've been able to keep at 49 plus or minus a few degrees. If I get a few warm days I just put in a few frozen watter bottles. When fermentation is done I'll use more ice bottles for a few weeks then bottle it. When it's carbed I stow it in the fridge until it's finished lagering.
