Ok, I am going to start brewing this (2nd BIAB), I should have posted a recipe last night to get feedback earlier, but, oh well. I am not shooting for a style per se, but I want to focus on the hops on this beer as I haven't used these hops (Simcoe,Citra), as far as I recall at least.

On hand I have Safbrew S-33, Safale S-04, Wyeast 3638 Bavarian (of which I have a small starter of), Wyeast 3068 Weheinstephan (harvested from previous batch), US-05 (harvested), and Wyeast 1007 German Ale (harvested). Both batches will be fermented in the low 60's stable temp.

What I am looking for is feed back on Hop schedule, and yeast selection....like I mentioned earlier I am looking to feature the hops, but really want to try the Wyeast 3638 Bavarian also, do you think the IBU's and the wyeast 3638 will be too outta whack?

Ignore the second 1 lb addition of brown sugar...

Ok, a couple changes, I went with:
15 pounds British Pale Ale Malt
2 pounds American White Wheat Malt
0.5 pounds Brown Sugar
0.5 pounds Cane Sugar
and same Hop Schedule

I hope this grain sack holds up,,,,,getting a bit nervous....
I am stirring alot to even out the heat within the grain sack....
