I decided to make a wit tommorow so i picked up some stuff for it this evening. I'm doing an extract batch cause i don't have much time, and have never brewed this tyle before, or any whaet style. I grabbed 3 lb.s of extra light DME, and 3 lb.s of wheat DME that is 55% wheat. 45% barley. I was going for 50/50 with the wheat to barley ratio, but i didn't realizew til i was home that the whaet was not 100% wheat. Is this going to be enough wheat?
 
i used the white labs wit yeast. i also used flaked oats and flaked red winter wheat, with some curacao peel and coriander. the gravity came out to 1.052 which was stronger than i thought it would be, and the color is a little dark, but pretty close to the upper limits on SRM from the BJCP guidelines. i think it will probably be pretty good.
