Hey guys,
All the rave reviews of cider using Wyeast 3068 has provoked me into trying it for myself. I bought a 23L Better Bottle for this long-term ferment and filled it with 19L of Graves Apple Juice. I know the 3068 will have a crazy krausen so I opted out of a 23L batch. I pitched the yeast at 19*C and it'll stay that way until I see some activity, at which point I'll drop the temperature down to 17*C and let it do it's business for 6 weeks and then bottle. I chose not to add any sugar because I want something my girlfriend and I can enjoy together, which means low ABV. The SG is 1.048 so I think I might get something around 5-6% does that sound correct with this yeast? I'll post some pictures later on.
