Go with whatever variety is most prevalent in the types of beers that you'll want to brew. No sense growing something that you'll never want to use in your own beer.
Take a look through some recipes that you think you're going to brew, figure out what varieties they call for, and see if you can make a short list that way.
If the varieties are all over the map, consider looking at a substitution chart to see if you find a variety that will cover you for a few different recipes.
