I have always done a protien rest when using more than 40% wheat, but is it necessary? I have seen reports of people using 60% wheat and doing a single infusion mash. Just curious on everyone elses opinion and brewing habits are when doing wheat beers.

I almost always do a protein rest. The only thing ive noticed about skipping it is more chill haze in the beer. it doesnt seem to affect my efficiency or head retention. although i dont think ive ever tried to brew with more than 50% wheat or any grain other than barley.
