The wife loves the Honey Maibock recipe that I brewed with Mr Beer and I'd like to try and duplicate that using extract from the LHBS.

Here's the MB recipe: Honey Maibock

I do all grain brewing on a 5 gallon scale now, but with the summer heat it's not as fun to sit around a propane burner for 7 hours. I'd like to let her do the majority of it, so an extract recipe would be ideal.

Any idea how to convert that and maintain the flavor profile?

I think if you find a Blonde Ale partial extract kit and just add some honey it will get you in the ball park. The Blonde kit may include some later hop additions which you'll need to leave out and save for something else.

You could also just find a Canadian style pre-hopped lager kit from Cooper's or Morgan's and just add a couple pounds of light extract and some honey. This may be closer to the Mr. B recipe.
