40 minute mash?

Conversion is often complete by that point...

60 minutes is the "standard" mash, but in general, you should mash until conversion is complete, whether that be 30 minutes, 90 minutes, etc...
 
I tried making a 60 minute Ipa and I cut the mash a little short
I ended up losing a percent of alcohol content
I brewed it again everything the same but longer mash and nailed the 6% alcohol
My standard is a 90 min mash now
I'm sure it depends on temps and grain content and what you're trying to do etc but 90 mins works for me
