I was buying ingredients online for Jamil's ESB recipe and saw that Brewmasters had Pacman yeast. I love Rogue beers so I said why not Pacman ESB. What temp would make a good ESB with this yeast? The Master brewer at Rogue says he ferments at 60 for most of the beer except for a few exceptions that ferment near 70. I am thinking 60ish for a nice clean Special Bitter

Partial Mash

4lbs Marris Otter
3lbs Light DME
12oz crystal 120
4oz crystal 20
8oz aromatic
8oz victory

1oz Cluster 60min
1oz Styrian golding 1min

Pacman Yeast
 
Pacman is a great yeast.

I have never used it for a true ESB - read as BITTER.

All I can say is try it and let us know what happens :D

no matter what, it'll be a tasty brew.
 
Rogue Ales

Clearly Pacman can produce a good ESB. My guess would also be towards 60F to limit the fruity esters which according to the style should be moderate to low but present.
 
I use Pacman a lot and always have luck fermenting at 63F for the majority of fermenting and bump up to 67F for a few days before crashing for kegging. I don't get any fruity esters with my process.
