I've just brewed a wit on Saturday and it's going along pretty well in the primary but I need to go away for a while and would like to leave tomorrow though it could wait till Wednesday. The question is this: if it's still got krausen and airlock activity is it a sin to transfer to secondary? I would do it when I get back but I don't want to leave it on all the bottom junk for too long. Thanks folks.
 
how long are you going to be gone?

you can leave it in the primary for 2 or 3 weeks with no problems.

I would avoid racking it if there is kraeusen or airlock activity. Racking could stunt the fermentation that is still going strong. if you rakc it too early, you are just going to get a bunch of sediment in the secondary, and that kind of defeats the purpose of racking it in the first place. :)

better to leave it a few extra days that rack it a few days too early.
