Fireproof/Heatproof wire a thermocouple?

Hi all.
I have a couple of industrial thermocouple assemblies I got off of Ebay.
They're like these:

I want to put one directly in my mash tun and one in my hot water tank. I have a typical Brutus 10 stand.
My question is about wiring:
Because I am going into those two vessels, the wiring from the thermocouple will necessarily be near the burners and I'm concerned about melting the wire (or having it catch on fire).

Ideally, I'd like some wire like this stuff:

With the metallic guard. Anyone know where to get that stuff and any other suggestions?

Well, there's always Grainger. You might know someone with an account there.

Otherwise, I'd search for "thermocouple wire" on eBay. Only place I've seen that has non-spool quantities.
