I've been homebrwing for about 15 years and finally came into putting up a cider in early September. Just found a simple recipe for a Graff and was wondering if it was possible to pull this off in a 3 week period? Recipe calls for 3 gallons cider, 4 lbs DME, 1oz loose hops (have Cascade), and 2 gallons H20. Reason for asking is there is a deadline for a homebrew competition. ANY INFO APPRECIATED...
 
You get a lot more sediment from fruit than you do from grains (in my experience at least). You'll also find that anything fruit-based needs to age a long time. I make more wine than anything else, so waiting 6-12 months is normal, I'm still getting used to people bottling a month after pitching yeast.

In other words, dont rush it. It won't taste good in time for the competition.
