When a brewery uses a 20bbl mashtun/lautertun, a 20bbl kettle/whirlpool, then they say they are using 40bbl fermenters. Are they producing 40bbls of beer on a 20bbl system or are they putting two batches into one fermenter, or are they leaving a ton of headspace? I was just trolling around on the used brewery equipment for sale on the internet and didnt know.
 
Two batches (or more) into one fermenter. Some will brew one batch in a day, aerate, pitch and then brew the remainder the next day and dump into the fermenting beer.

There is a brewery here that has a 60bbl brewhouse and a coupe 360bbl tanks. Takes six consecutive batches to fill that bad boy up
 
Okay, that makes sense. Thanks for clearing that up. So you could technically have a 8bbl brewhouse, and use 30bbl fermenters, just putting 3+ batches in there.
