Just started my first batch of wine using real grapes. How often do I need to punch down the cap and mix the grapes back in? They seem to puff up again pretty quick, but I don't want to over do it.
 
twice a day is standard, more won't hurt.
The reason for punching the cap is to keep the top layer of grapes from drying out too much and becoming a nice place for spoilage microbes to start growing.
