I'm brewing a Wee Heavy this weekend. What do you guys think recipe? I have some Golden Promise and Pilsner available, but thought the Maris Otter would work fine. I was also think of using some Chinook at 60 minutes...

Style: Strong Scotch Ale
Batch Size: 5.00 gal
Boil Size: 7.50 gal
Estimated OG: 1.089 SG
Estimated Color: 16.8 SRM
Estimated IBU: 29.0 IBU
Brewhouse Efficiency: 75.00 %
Boil Time: 120 Minutes

Ingredients:

14 lbs 8.0 oz Pale Malt, Maris Otter (3.0 SRM) 92.06 %
8.0 oz Caramel/Crystal Malt - 60L (60.0 SRM) 3.17 %
4.0 oz Aromatic Malt (19.0 SRM) 1.59 %
4.0 oz Honey Malt (25.0 SRM) 1.59 %
2.0 oz Chocolate Malt, Pale (225.0 SRM) 0.79 %
2.0 oz Roasted Barley (462.0 SRM) 0.79 %

0.50 oz Northern Brewer [7.00 %] (60 min) 13.5 IBU
0.50 oz Goldings, East Kent [5.00 %] (60 min) 9.6 IBU
0.25 oz Goldings, East Kent [5.00 %] (30 min) 2.5 IBU
0.25 oz Northern Brewer [7.00 %] (30 min) 3.4 IBU
1 Pkgs Scottish Ale (Wyeast Labs #1728)


Mash Schedule:

60 min Mash @ 155.0 F
10 min Mash Out @ 168.0 F
Fly Sparge @ 170F


Notes:
------
Remove one gallon of first runnings and boil down to a pint or two, then add back to boil).
 
I would probably simplfy a bit (drop the chocolate and aromatic) to let the caramelization star. I would also avoid chinook, they can be a bit rough which is not what you want in a wee heavy.
