I opened up my bucket to take a test. I noticed it taste and smelled a bit sour. It's a European pilsner. Any thoughts from anyone if this is bad/normal?

Its hard to tell. Are you fermenting at lager temps and using a lager yeast? If so, its probably not done. If no, then the increased temps could have produced any number of odd flavors.

It could be natural sulfur -ish aromas which dissipate over time. Or it could be a wild yeast.
