I have 2 gallons of apple cider (juice) brewing. Was thinking of adding about 8 lbs of sour cherries when I rack to secondary. The cherries which were picked in August & have been frozen since then. Should I pasteurized them, just pitch them in or sulphite?
 
Just pitch them in. If it's secondary then the alcohol with prevent what little bugs if any on the fruit from doing anything harmful.
 
I'm going to start a 5gal batch of cider soon and was also thinking about adding some sour cherries to secondary. My wife has a steam juicer and I was considering just extracting the juice to keep any and all pulp out of my cider. Any thoughts?
