I corked my Lambic that I had fermented for 7 months almost 6 weeks ago now. I've already shared and drank half of the bottles since then. It's just awesome tasting.

My question is, I'd like to store a few for the long haul, how long can they be rested/stored for and remain drinkable? 1 year, 2 years? I'm dipping them in bottle wax next week to really lock them up.

The storage time will be dependent on the integrity of the cork. Lay the bottles on their sides and don't let the cork dry out.

Per Wild Brews, some Lambic brewers put a best consumed by date on their bottles of 20 years from the date of bottling.

They will keep for years. I have some that are 1.5 years old, and have not made it to the bottle yet.
