I'm brewing a lager that I will want to ferment in the 46-58 degree range. In order to have fermentation occur, at what degree should the ambient temp be? Or more precisely, how many degrees will fermentation occur beyond that of the ambient room temperature? I have a freezer rigged with a temp controller and am wondering what temperature to set the freezer at.

This will depend from situation to situation and I think you just need to experiment and find out the proper temp for your equipment. I've seen different setups have to run from a 2 to a 10 degree cooler fermentation because of heat produced during fermentation.

I recently got into lagering also. Ask ten people that same question and you will get ten different answers. I think just do some research and then go for it.
