Control panel wiring questions

So I've been lurking on the electric brewing section for a few days now, and I'm seriously considering going electric.
For now I want my control panel to have a switch for a pump, and a DPDT
240v 30 amp switch.
I want 2 PID's, one to monitor mash temp and one for my element in my HLT. which would be a 5500w element.

If I install a temp probe in my BK which also has a 5500w element. After my sparge can I hook the Bk up to the HLT PID to monitor cooling temps??

When wiring the SSR do you wire the DPDT switch before the SSR or after??
I want to just be able to kill power completely to the element.

I guess I should mention that I want to use the quick disconnects on the Temp. probes to switch from the HLT to the BK.

I'm just trying to avoid buying a 3rd PID for the BK if one will work. I plan to slowly upgrade the control panel as funds become available.

YES

AFTER - otherwise it won't do anything if the SSR fails closed.
