My last batch I used some whole hops that were rather dry and clumped up from my LHBS. They also had some discoloration on the leaves much like lettuce that is a little past its date.

Can hops in this condition lend off flavors into the beer?

What do they smell like? If they smell cheesy, then I wouldn't use them. Most whole leaf hops that I use are clumpy (but the foodsaver has a lot to do with that). The leaves are also a bit discolored. If that's all that's wrong with them, I wouldn't worry.

Right, if they smell good, they are. I had to substitute for the Perle in my latest batch. They were green, but a slimy green.
