For my 3rd brew, I'd like to make an American Wheat with a little honey in it. After it ferments I'll be adding cherries to the secondary.

Is it okay to add say 1/2 to 1# of honey to the recipe? The only thing it will change is the OG and some flavor, correct?

Here's what I"m thinking
6.6# Wheat/Barley Malt Extract (50/50)
1 oz Hallertauer Hops (60 min)
.5-1 oz Hallertauer Hops (5 min)
5-6# cherry puree or frozen cherries
.5-1# Honey

German wheat beer yeast

I'm getting ready to keg my honey wheat tomorrow. If a little honey flavor is what you're after, the only real way to get it is by steeping some honey malt. Honey itself ferments completely, so it with give it a ABV boost, but it's flavor contributions will be minimal.

For mine I steeped 1/2 lb Honey Malt along with 1/2 lb flaked wheat in a grain bag. At flameout I added 2 lbs orange blossom honey. Fermentation took off like a rocket! When I tasted my sample on rackin' day, the honey taste and aroma came through beautifully :)
