Cantillon Rose de Gambrinus (Belgium) 38 5.0 £4.25 DB

This is the beer that rekindled interest in fruit lambics. Over the years up 1973, when this beer was first produced, lambics had been getting ever sweeter, using fruit syrups. Cantillon returned to basics, using real fruit to produce a subtle blending which doesn't allow the sweetness to swamp the acidity of the lambic. It was given this name to distinguish this beer from existing fruit lambics.

07. Belgian Lambic
Only produced in a small area of Belgium stretching south west from Brussels. These beers have a special and unique method of production that dates back to the middle ages, not least being spontaneous fermentation and a long maturation in oak. This produces a clean, acidic sharpness to the flavour that can take time to appreciate, but is well worth the effort. To modify this sharpness fruit is sometimes added to the maturing casks. Alternatively, demerara is added to Lambic to make Faro. Blended Lambics are called Gueuze or Geuze (pronounced ’gerzer’). The best Lambics deserve the half Champagne bottles that are used. They truly are the ‘Champagne of Beers’, and make a great aperitif.
