I've been reading a lot about oktoberfest lately and I don't have the ability to lager. I read in another thread that you can take pretty much any neutral ale yeast and use that instead. I have a random WLP008 (east coast/alt ale yeast) I got from my brother for no good reason that I can discern; I thought it might work well.
I looked through a lot of recipes on recipator (and the few posted here of course) and Vienna malt seems to be a major ingredient. Paddockwood isn't carrying it right now and I can't get any locally either. I formulated the recipe below based on what I have on hand. Any suggestions on how to get the nice malty beer I've read so much about would be excellent and much appreciated! As a side note I plan to use this for my first decoction mash attempt. I'm not trying to match the style point for point (hard to do when you're not even lagering) but keeping to the spirit would be nice.
