In SF, there is this place called Magnolias bar and pub, and they make fantastic beer. They have a mild ale, and on their website they have the characteristics and ingredients of the beer. Can anyone help me back formulate the recipe? Here is the info:
Sara's Ruby Mild

OG: 1.042
BU: 15
ABV: 3.9%

Ruby red with a sweet, malty fruitiness and a hint of black cherries. Neither as strong nor as dark as its namesake (from the Sarah Hughes Brewery of Dudley), but still a classic West Midlands mild: low in alcohol, thirst quenching, but rich in flavor.

Malts: Floor-malted Maris Otter; crystal malts; wheat; chocolate malt; flaked barley
Hops: Fuggles

HELP!! THanks!

Jason

Five gallon recipe @ mid 70s conversion efficiency

6 lbs MO pale malt
1/4 lb crystal 55L
1/8 lb crystal 90L
1/2 lb chocolate malt
1 lb wheat malt
1/2 lb flaked barley

1 oz Fuggles @ 4%AA for 60 min

Wyeast 1028 London Ale yeast

I don't know what Magnolia's beer looks or tastes like but this should make something in the ballpark. :mug:

BigED, I would back off on the 1/2 LB of chocolate to .21 or .24 LB as it will be black and very bitter from too much chocolate. Your recipe does not look bad otherwise. I changed the crystal malts because 55L and 90L is unavailable to me. I would follow Biermunchers advise on the mashing temp too.

I entered it into Beersmith to check this out.

Thanks a lot for the help! I have not asked them directly for the recipe, but I think I might go there tonight for my birthday happy hour! I'll see what they say. Otherwise, the recipes look great, and I will probably brew this if I can get hold of some fuggles. Thanks!
