I am interested in moving to kegs because bottles are PITA....

most people use the 1-2-3 method bottling, but since the CO2 is carbonating the beer in a keg and it only takes a few days, do you still leave the beer in the keg for 3 weeks before drinking, or can you drink kegged beer basically after 3 weeks or so???
 
Yes, but it gets better after another couple of weeks. I often go 10-14 days in the primary depending on activity and 2 weeks in the secondary. Then, I hook it up at serving pressure for 3-5 days.
