Im getting ready to pick out a recipe for a holiday brew,
I didn't want to rely only on the one I had, from papazian's joy of home brewing book.
Im looking to make a full bodied ale, thats spicey, with touch of cinnomin in the flavor, any suggestions are welcome!
 
I decided to go with the Holiday Cheer recipe from the joy of homebrewing book, with a few changes.
7lbs light dry malt extract
2 oz black malt
1/2 lb crystal malt
2 oz cascade hops
1 lb local raw honey
1 oz bitter orange peel
2 3 in. cinnamon sticks
1 oz fresh grated ginger root
1 oz saaz hops (finishing)
4 oz cherry extract for bottling time. (unless someone has knowledge of trying this, and it don't work or don't taste good, please let me know)
Its my first time with specialty grains, and first time Im going with a two stage fermentation, will let ya know if it comes out okay :D
