I have some hop bitterness trouble and maltiness trouble too with my beers most of them just seem eh nothing like a commercial beer. This is what I have gathered about my water from our generic sheet they send out to every1 and what I got from the engineer guy when I called.

copper 0.08% (90th % tile) not sure what that is
lead 2.3 (same as copper)

atrazine (ppb) 0.16
Fluoride (ppm) 0.90
Haloacetic Acids {HAA} (ppb) 40.9
Nitrate (ppm) 4.4
Simazine (ppb) 0.07
TTHM's (total trihalomethanes) (ppb) 55.2
Total organic Carbon (ppm) 1.18
Turbidity (ntu) 0.61

alkalinity is an avg of 120 (runs from 80-150)
chlorine is 1.0-2.5 on the generic sheet they send out it was 2.25
sulfate was a no go he didn't know since they weren't required to test for it.

Mg 0.03 ppm
Fe 0.2 ppm
Ca 250 ppm
TDS 250 ppm
Na 4 ppm
and the PH was an avg of 7.3 with a range of 6.8 to 7.5

hopefully some1 can point me in the right direction here.
 
With regards to your problem (malty & bitterness), the sulfate and chloride are what you need to look at, so i suggest getting your water analyzed in order to find out what your starting sulfate level is. I would suspect pretty low, as your water, on the whole, looks pretty soft, eventhough your Calcium is fairly high.
 
our water is very hard so he said so. i really need to look into this wardlabs deal and see about that.

i did the home mineral test the 16.50. i wanna say it was 2 days to get there then 1-2 days for your results. i think i got mine the next day after they got the water.
