Looking for a good AG winter Beer

I've only done one AG brew so far and it turned out great. I was thinking about brewing up a beer that could bottle condition until the winter months. Does anyone have any recommendations? Should I do a few more simple AG batches before I try a bigger beer?
 
Here is one I am working on:

10 lbs Maris Otter
8oz Medium Crystal
2 oz Chocolate
4oz carawheat

1 oz Columbus bittering (60 min)
1 oz KKG aroma (5 minutes)

1/2 oz. Pumpkin Pie Spice (5 min)

Yeast:
Nottingham or
Wyeast 1028

I think I am set on every thing but the hop additions....trying to decided on the amount of Columbus I want.


Also, the spice might be under kill but better safe than sorry. If taste dictates at racking to sec., about a week before bottling I plan to take another 1/2 oz of the spice and mixing it with 1 c. or less of vodka and let it sit then filter through a coffee filter. I will add this extract to taste in the bottling bucket.
