I was going to brew a proper ale, but then I opened my grain bin and saw all these little bags of left-over grain and thought, "Why not?" So I brewed a mixed bag ale with cocoa.

25 gallons

25# 2-row pale malt
42 # Pilsner malt
4# 120 L crystal
3.5# chocolate malt
1.5# roast barley
.5# black malt
4# cara-pils
1# flaked rye
2# Munich male
2# mixed crushed grains of uncertain variety from a dark brew of the past

5.5# palm sugar (boiled in 1 gallon of water to make a simple syrup)
40 ozs. cocoa powder, 2# unsweetened dark chocolate (simmered in the simple syrup and then added to the kettle)

8 ozs. Amarillo pellets for 90 minutes
6 ozs EKG pellets for 10 minutes

Ringwood Ale yeast
