5 days ago I added 5 crushed campden tablets and 1/2 tsp potassium sorbate per gallon of wine. Within the hour of adding and stirring in 5 cups of sugar the airlock is bubbling. I added another 3 campden tablets, any other suggestions?
 
You usually should add the campden and sorbate and wait 24 hours before adding more fermentables. The stuff doesn't work instantly. As for what to do now, I don't know. The campden will eventually dissapte, but I'm not sure about sorbate.
 
A lot of times when I add the sugar, it looks like fermentation has taken off because you usually stir the crap out of it and it is degassing. PLUS I have added sugar and had volcano like activity. if it were me I would pull a sample and check with a hydrometer....wait a couple of days and check again to actually see if it IS fermentation or not.
