I have another super-noob question here specifically about the recipe kits on the Austin web site.

Does the mini-mash version of a recipe just require a little steeping of grains (and then removal) before the boil with malt extract, or does it require the method of keeping the grains at certain temperatures for certain lengths of time to start breaking them down? Sorry, I don't yet have the vocabulary to describe this stuff easily.

Most of their mini-mashes are no more complicated than heating 2.5 gallons of water to 160F or so and putting the grains in a big mesh bag and letting it sit in the water for 45 minutes. With that much water, temperature control isn't a worry. Plus, most of the fermentables come from the extract, so efficiency isn't a big concern.
