I made a holiday beer a couple of weeks ago and was sort of running on memory. I used cinnamon, ginger, clove, and star anise. The amounts were fine, except that for a 5-gallon batch I used probably about 4-5 star anise. This was for the last 10 minutes of the boil, and now it has a pretty anisey smell. Any chance this will mellow with time?

It brought back some memories that I almost have.

I Lol'd. I had a similar experience (I think ... its hazy) but it was with Drambuie.

If you don't like it now, put it in a closet and break it out NEXT holiday maybe. Anise is definitely a love it or hate it thing. The Triple Moine Belgian ale has a touch if it and its delicious, but if than more than a hint of it then it can be nasty.
